I need your help

We are wanting to try to eat a little healthier. We usually have a meat and potato kind of meal. We usually add something starchy like mac & cheese, pasta, bread, corn. I know there is a balance between eating what we usually eat and eating super healthy. We have tried a few things, but we are still looking for meals to add to our favorites.

If you know of a meal, main dish, side dish, or even a dessert, please leave a comment with the recipe or a link. We would like to try at least one new thing this week.

I cant't remember where I heard this idea, but I thought it was a good one! My husband is also a meat and potatoes kind of guy, so one thing that I sometimes try to sneak a little veggie goodness in on him is to puree some carrots and or sweet potatoes and mix them in with my mac and cheese! It's usually a little orangier than normal, but usually he can't tell the difference! Baby steps....

Taco salad is a great way to get lots of veggies. Brown ground meat--deer meat if you have it. Chop up lots of tomatoes, green peppers, lettuce, onions, whatever you have. Open a can of kidney beans, drain if you don't like the liquid. Let everyone make their own salad with the above ingredients--top with cheese, salsa, low fat sour cream, and a few corn chips. This is a quick, but healthy meal. Susan

A healthier alternative to ground beef in recipes is ground turkery. You can buy it at the grocery store in the frozen section, it kinda looks like packaged sausage. It might take some time getting used to, but we LOVE it now. My husband is VERY picky, but now he really likes the taste! We use it in hamburger helper, tacos, and I'm trying it in meatloaf next week.

Stir fry is also a GREAT way to do veggies. Don't over cook the veggies, but putting them with chicken, soy sauce and even some fruit like pineapple and orange REALLY make them taste good!
